Ingredients For Making Roasted Cauliflower

  • 1 medium cauliflower

  • 50g butter

  • 2 tablespoons chopped parsley

Method For Making Roasted Cauliflower

  1. Heat the oven to 190C / 170C fan/gas 5. Spread the cauliflower leaves in a small baking tin and then place the cauliflower in the middle. Rub the butter, sprinkle with a little salt and bake for 20 minutes.
  2. Reduce the temperature to 160ºC / 140ºC / gas 3 and cook the cauliflower for another 20 minutes, watering with butter. Add the oil, capers, parsley and zest and lemon juice to the hot butter and add the cauliflower a few times before serving - it will absorb the flavor of the sauce. When ready to serve, cut into slices and serve with crunchy leaves.
