Roasted Cauliflower Recipe With Capers Sauce
Cooking cauliflower in this way gives a balanced richness through the sauce. A great dish for a roast dinner and also doubles as a vegetarian main course
Ingredients For Making Roasted Cauliflower
- 1 medium cauliflower

- Trimmed and reserved leaves
- 50g butter

- 2 tablespoons chopped parsley

Method For Making Roasted Cauliflower
- Heat the oven to 190C / 170C fan/gas 5. Spread the cauliflower leaves in a small baking tin and then place the cauliflower in the middle. Rub the butter, sprinkle with a little salt and bake for 20 minutes.
- Reduce the temperature to 160ºC / 140ºC / gas 3 and cook the cauliflower for another 20 minutes, watering with butter. Add the oil, capers, parsley and zest and lemon juice to the hot butter and add the cauliflower a few times before serving - it will absorb the flavor of the sauce. When ready to serve, cut into slices and serve with crunchy leaves.
